Do without Dinner Soups

One key part of our ‘Your Life Beyond’ Programme is diving into a bowl of rich, indulgent highly nutritious soup.

One of our favourites is Creamy Courgette – with a kick of spicy heat.

We have a range of equally delicious soups and other evening meals that come in at approximately 200 calories and yet will leave you feeling energised, satisfied and a hug with every mouthful.

Happy to share one of ‘secret’ recipes.

CREAMY COURGETTE SOUP

Ingredients

  • 1 onion peeled and chopped
  • 1 tablespoon olive oil
  • 400 g courgettes diced
  • 1 clove garlic peeled and very finely chopped or crushed
  • 500 ml vegetable stock
  • salt and pepper if needed
  • grating of nutmeg or use ¼ teaspoon ground nutmeg

Method

  • Place a large saucepan over a medium heat, and fry the onion in olive oil for 5 minutes. They'll start to soften and turn golden.
  • Add the garlic and courgette, and fry for a further 5 minutes.
  • Add the stock and nutmeg, bring to the boil and simmer gently for 20 minutes.
  • Blitz until smooth with a hand blender.

Health benefits of courgette

Courgettes are very low in calories and they have a high water content. They are also super nutritious as they are a great source of vitamins A and C, potassium and fibre.

Make sure to include the skin of the courgette in the soup, as that is where most of the fibre comes from. It will all be blended up in to the soup anyway.
